The trio love a whole range of foods including curry! Which is great for me too because it gives me the opportunity to cook food I’ve never had experience cooking before. This courgette, cauliflower and chick pea curry recipe is full of vegetables so it’s healthy and full of flavour. It always goes down really well too.

Some of you may remember from my old posts that the three year old nanny charge from the trio has been having very limited dairy. This is due to having a constant cold and we find limited dairy helps this. So this recipe could also suit children who are dairy free too. Courgette, Cauliflower and Chick Pea Curry Recipe

This recipe only takes roughly 45-60 minutes and it’s very easy to cook.

You need:

1 tbsp olive oil

1 small onion, finely chopped

2 tsp mild curry paste

2 tbsp tomato puree

2 tbsp smooth peanut butter (optional)

300ml vegetable stock or water

1/2 medium cauliflower, cut into florets

2 medium courgettes, diced

400g tin chick peas, rinsed and drained

250ml natural bio-yogurt

As you can see you can add peanut butter. However, this is optional. So if your child has a peanut allergy just don’t add it! It will still taste yummy.


Heat the oil in a large frying pan and then turn it down to a low heat. Add the onion and fry until softened. Add the chopped courgette and cauliflower to the onion and cook for two more minutes. Measure out the curry paste, tomato puree, peanut butter (if you’re using it) and add to the mixture. Then add the vegetable stock or water and the chick peas. If you can, cover and simmer for 20 minutes. It will be better if you can cover, if not it will just take a little longer.

After 20 minutes and check that the mixture ha reduced and the vegetables are cooked through. Remove from the heat and let the mixture stand for roughly 10 minutes before adding the natural bio-yogurt. I serve one mixture onto a plate before adding the yogurt so that it is dairy free for the three year old.

Pop a side of rice onto the plate or you can mix all together. If you have any food remaining, you can freeze for another meal or you can keep it up to 24 hours in a fridge.
